Recipe - AeroPress Regular Cup Jonathan Gagné

Summary

Jonathan Gagné presents us with a great and somewhat radical recipe (which is backed up by various studies from coffee to even geophysics) which is differentiated by its 10-minute brew-time.

Without writing too much here - it’s worth taking a read of Jonathan’s in depth blog post on this recipe and watching the video below.

  • Style: Standard
  • Vibe: Bright / Heavy / Sweet / Chocolatey
  • Use case: Morning / Afternoon / “Regular cup”
  • Total time: 10 minutes

📝Recipe Notes:

  • Uses a dry paper filter and Fellow Prismo for extra resistance and reduced dripping.
  • Long contact time: ~10:00 total, with swirls at 5:00 and just before pressing.
  • Stir in a back-and-forth motion (no circular stirs) to avoid channeling.

Parameters

Coffee

  • Beans: Any quality light-roast filter coffee.
  • Roast level: Light (I use medium to Dark myself)
  • Dose: 18 g
  • AeroPress type: Classic, standard (upright)
  • Grinder: Comandante C40
  • Grind setting: Fine, 13 clicks (Beean Coffee reference)

Water

  • Total water: 260 g
  • Brew ratio final product (including dilution): 1:14.4 (coffee:water) – no bypass
  • Temperature: 100°C / 212°F
  • Water type (if relevant): good-tasting filtered water

Yield

  • Final yield: ~220–230 g in cup (some water stays in the puck)
  • Target strength/feel: strong, full “regular cup” filter-style brew

Step-by-step

  1. Choose a sturdy mug where the AeroPress can sit with a good, stable level.

  2. Place a dry paper filter in the Fellow Prismo (or standard cap) and screw it on tightly.

  3. Grind 18 g coffee to fine (13 clicks on a Comandante C40).
Add the coffee to the AeroPress and shake left-to-right to level the bed.

  4. Start your timer and pour 100°C water until the AeroPress is filled – about 260 g of water (a bit more is fine; some will drip).

  5. Using a spoon or the AeroPress stirrer, stir in a back-and-forth motion from the very bottom of the chamber all the way to the top.
    Avoid circular stirs.

  6. Place the plunger a few millimetres into the AeroPress. A small amount of water may escape; don’t worry about it.

  7. Remove the AeroPress from the scale and give it a gentle swirl to level the coffee bed and let is steep.

  8. At around the 5:00 mark, give the AeroPress another thorough swirl and continue to let it steep.

  9. At about 9:00, begin pressing gently. Aim for a slow, steady press of a bit more than 1:00, finishing around the 10:00 total time.

(No bypass water is added; the drink in the cup is the final beverage.)
